This is my absolute favourite cake for carving with. It holds together amazingly and will easily last for up to a week after baking. Not that people will be able to resist it for that long anyway.

It's so lovely to work with it almost gives you the impression its dry because of the close crumb pattern, but its far from it. I hate the word, but it is the the most moist cake you will eat!

 

This isn't just a recipe, its one I have been using over and over for my career as a cake maker. Soft, flavourful and versatile and delicious enough for weddings and celebrations as well as sculptural cakes.
